Ingredients: 

225 g dried pasta shells
1 tbsp olive oil
115g shelled and halved walnuts,mixed salad leaves
225 g dolcelatte cheese,crumbled salt

Dressing
2 tbsp walnut oil
2 tbsp extra virgin olive oil
2 tbsp red wine vinegar
salt and pepper

Method: 

1. Boil a large pan of lightly salted water.Add the pasta shells and olive oil and cook for 8-10 minor until tender.Drain the pasta,refresh under cold running water,drain again and set aside.2
2. Spread out the shelled walnut halves on to a baking tray and toast under a pre heated grill for 2-3 min.Set aside to cool while you make the dressing.
3. To make the dressing,whisk together the walnut oil,olive oil and vinegar in a small bowl,and season to taste.
4. To make up the salad,arrange the sald leavesin a serving bowl.Pile the cooled pasta in the middle of the salad leaves and sprinkle over the cheese.Just before serving,pour the dressing over the pasta salad,scatter the walnut halves on to, and toss together to coat with dressing.Serve immediately.
