A delicious hot cheese salad of melting goat's cheese over sliced tomato and basil on a base of hot ciabatta bread.
3 TBSP OLIVE OIL
1 TBSP WHITE WIVE VINEGAR
1 TSP BLACK OLIVE PASTE
1 GARLIC CLOVE CRUSHED
1 TSP CHOPPED FRESH THYME
1 CIABATTA LOAF
4 SMALL TOMATOES
12 FRESH BASIL LEAVES
2*125G LOG'S GOATS CHEESE
1. Mix the olive oil,white wine vinegar,black loive paste,garlic and chopped thyme togetherin a screw top jar and shake vigorously.
2. Cut the ciabatta loaf in half horizontally then in half again vertically to make four pieces.
3. Drizzle some of the dressing over the bread,then arrange the tomatoes and basil leaves on the top.
4. Cut each roll of goat's cheese into 6 slices and place slices on eac piece of ciabatta.
5. Brush with some of the dressing and bake in a pre heated oven 230 degree for 5-6 min until turining brown at the edges.
6. Pour the remaining dressing over the mixed salad leaves and serve with a baked ciabatta bread.
