A robust vinaigrette dressing is served with this warm salad.If you prefer,you can serve the salad cold.
175 gn puy lentils,cooked
2 tbsp olive oil
1 small onion,sliced
4 sticks celery ,sliced
2 cloves garlic crushed
2 courgettes,trimmed and diced
125gm french beans,trimmed and cut into short lengths
1/2 red pepper,deseeded and diced
1/2 yellow pepper,deseeded and diced
1 tsp Dijon mustard
1 tbsp balsamic vinegar
salt and pepper
1. Place the lentils in a large mixing or serving bowl.The lentils can still be warm ,if wished.
2. Heat the oil in saucepan and fry the onion and celeary for 2-3 min until softened but not browned.
3. Stir the garlic,courgettes and green beans into the saucepan and cook for a further 10 min.
4. add the peppers to the pan and cook for 1 min.
5. Stir the mustard and the balsamic vinegar into the pan and mix until warm and well combined.
6. Pour the warm mixture over the lentils and toss together to mix well.Season with salt and pepper to taste and serve immediately.
