The beetroot add rich colour to this dish,tinting the potato an appealing pink.Mixed with cucumber,it is a really vibrant salad.
500 g waxy potatoes diced
4 small beetroot cooked and diced
1.5 cucumber thinly sliced
2 large dill pickles sliced
1 red onion,halved and sliced
fresh dill sprigs to garnish
DRESSING
1 garlic clove crushed
2 tbsp olive oil
2 tbsp red wine vinegar
2 tbsp chopped fresh dill
salt and pepper
1.Cook the diced potatoes in a sucepan of boiling water for about 15 min,or until just tender.Drain and set aside to cool.
2. When cool,mix the diced potato and beetroot together gently in a bowl and set aside.
3. To make the dressing,whisk together the garli clove,olive oil,vinegar and dill and season to taste with salt and pepper.
4. When you are ready to serve the salad,line a large serving platterwith the slices of cucumber,the sliced dill pickles and the slices red onion.
5. Spoon the potato and beetroot mixture on top of the other vegetables in the centre of the platter.
6. Pour the dressing over the salad and serve.Garnish with fresh dill sprigs.
