Pecan nuts,with their slightly bitter flavour,are mixed with sweet potatoes to make a sweet and sour salad with an intresting texture.
500 g sweet potatoes diced
2 celery sticks diced
125 g celeriac grated
2 spring onion sliced
50 g pecan nuts chopped
2 heads chicory,seperated
1 tsp lemon juice
fresh thyme sprigs,to garnish
DRESSING
4 tbsp vegetable oil
1 tbsp garlic wine vinegar
1 tsp soft light brown sugar
2 tsp fresh thyme
1. Cook the sweet potatoes in a large saucepan of boiling water for 10-15 min until tender.Drain and set aside to cool.
2. When the potatoes have cooled,stir in the celery,celeriac,spring onions and pecan nuts.
3. Line a salad plate with the chicory leaves and sprinkle with lemon juice.
4.Spoon the sweet potato mixture into the centre of the leaves.
5. In a small bowl,whisk together the vegetable oil,garlic wine vinegar,soft light brown sugarand chopped fresh thyme leaves.
6. Poue the dressing over the salad and serve at once,garnished with fresh thyme sprigs.
