Sweet Potato Salad

This hot fruity salad combines sweet potato and fried bananas with coulourful mixed peppers,tossed in a honey based dressing.

Ingredients: 

500 gm sweet potatoes diced
4 tbsp butter
1 tbsp lemon juice
1 garlic clove crushed
1 red pepper deseeded and diced
1 green pepper deseeded and diced
2 bananas thickly sliced
2 thick slices white bread,crust removed,diced

Dressing
2 tbsp clear honey
2 tbsp chopped chives
2 tbsp lemon juice
2 tbsp olive oil

Method: 

1. Cook the sweet potatoes in a pan of boiling water for 10-15 min until tender.Drain thoroughly and reserve.
2. Meanwhile,melt the butter in a frying pan.Add the lemon juice,garlic and peppers and cook,stirring constantly for 3 min.
3. Add the banana slices to the pan and cook for minute.Remove the bananas from the pan with a slotted spoon and stir into the potatoes.
4. Ad the bread cubes to the frying pan and cook,stirring frequently,for min,until golden brown on all sides.
5. Mix the dressing ingredients together in a small saucepan and heat until the honey is runny.
6. Spoon the potato mixture into a serving dish and season to taste.Pour over the honey dressingand sprinkle the croutons over the top.Serve immediatley.
