Three-bean Salad

Fresh French beans are combined with soya beans and red kidney beans in a chive and tomato dressing to make a tasty sald.

Ingredients: 

3 tbsp olive oil
1 tbsp lemon juice
1 tbsp tomato puree
1 tbsp light malt vinegar
1 tbsp fresh chives
175 g french beans
400 g canned red kidney beans,rinsed and drained
2 tomatoes chopped
4 spring onions trimmed and chopped
125 g feta cheese cut in cubes
salt and pepper
mixed salad leaves to serve

Method: 

1. Put the olive oil,lemon juice,tomato puree,light malt vinegar and snipped fresh chives into a large bowl and mix thoroughly.Set aside until required.
2. Cook the french beans in a small pan of lightly salted boiling water for 4-5 min.Drain under fresh water cold water to prevent any further cooking and drain well again.Pat dry with absorbent kitchen paper.
3. Add all the beans to the dressing,stirring well to mix.
4. Add the tomatoes,spring onions and feta cheesw to the bean mixture,tossing gently to coat in the dressing.Season to taste with salt and pepper.
5. Arrange the sald leaves on serving plates.Pile the bean salad on top,garnish with extra chives and serve.
